Vegetarian Lasagna

This “Two-Bean Two-Cheese Vegetarian Lasagna” is so delicious, you may not even realize how healthy it is! Adapted from the Lean Bean Cuisine cookbook, it is filled with the usual lasagna suspects (minus the meat), plus navy beans, pink beans, fresh basil, parsley, and spinach, and it is a perennial hit at dinner gatherings. Biscotti in the Tradition of Larry Yonaitis – SOLD!

After the repeated sacking of Rome the Renaissance brought back the biscotti. It was a Tuscan baker who created the dry, crunchy biscuit which was deemed to be the perfect medium to soak up wine. Louisiana Gumbo – SOLD

Gumbo is a Louisiana soup or stew which reflects and blends the rich cuisines of regional Indian, French, Spanish, and African cultures. The word “gumbo” is derived African term for okra, “gombo,” and first appeared in print in 1805. Well, ERUUF’s very own Becky Burks is going to make enough crab and shrimp gumbo to feed 8. It’s probably better in cool weather, but she could do it any time with 2 weeks notice. And she will furnish rice on the side. Yum.
